When you have leftover rice, you can either go savory and make Fried Rice or you can go sweet and make Rice Pudding. I have to admit, we had Fried Rice for dinner last night and this morning I made Rice Pudding. I had to taste it; so it was pudding for breakfast!
I used 1/4 cup milk and 1/2 cup heavy cream; you could substitute 3/4 cup milk or half & half. I also used sugar. You could use honey. You could also add raisins or any other dried fruit!
1 cup cooked brown or white rice
2 tablespoon sugar
2 tablespoon butter
1/2 cup heavy cream
Sprinkle of nutmeg
Maraschino cherry for garnish
- Combine the rice, sugar, butter, cinnamon, milk and cream in a saucepan. Cook on medium heat until the mixture begins to boil. Turn down to low and simmer for about 10 minutes or until the pudding is thick and creamy.
- Serve in a small bowl. Sprinkle on nutmeg and add a cherry to the top.
