Raspberry Cucumber Salad

Sometimes a recipe just reveals itself while I am scanning the refrigerator for a healthy choice. This combination of flavors is fresh and full of balanced flavors. From the English cucumber to the crisp celery, sweet apples and plump raspberries it is certain to become a favorite. The avocado provides healthy fat; no need to add olive oil. With the sweet and tangy flavors, this salad is wonderful without salad dressing. A drizzle of white balsamic vinegar adds some sparkle. White balsamic vinegar is similar to red but has a slightly milder flavor that will not overpower the delicate flavor the cucumber.

Serves two or one generous plate. Adjust quantity of ingredients based upon your guests and their appetites.


  • 1 celery stalk, sliced

  • 1/2 gala apple, sliced

  • 20 red raspberries

  • 1/2 avocado, sliced

  • 1/2 English cucumber, sliced

  • Splash of white balsamic vinegar


  • Arrange the vegetables on a plate and add a drizzle of balsamic vinegar.
  • Serve and enjoy.
