Radish Salad

This salad uses two varieties of radishes; the traditional red radishes found in most grocery stores and the Daikon radish. Radishes have a spicy tang to them so I add avocado and a baby kale, green leaf lettuce mixture. This salad is served with an apple cider vinaigrette dressing sweetened with sugar.

  • 6 red radishes, sliced into wedges

  • 1 Daikon radish, thinly sliced

  • 1 avocado, sliced into wedges

  • 2 cups salad greens

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon water

  • 1 teaspoon sugar

  • Place the salad greens in a bowl, drizzle on 1 tablespoon olive oil and toss with a sprinkle of salt.
  • Mix the other tablespoon of olive oil with the apple cider vinegar, water and sugar.
  • Slice the radishes and avocado and add to salad.
  • Toss with salad dressing.
  • Serve!
