Most guacamole recipes start with chopping tomatoes, onion, jalapenos and garlic. Yesterday, I was craving a chip and guac snack. As I surveyed the contents of my pantry and refrigerator, I realized I had nice, ripe avocados but no tomatoes or jalapenos but I did have a container of my favorite fresh salsa from the market.
I mashed the avocados, spritz on some lime juice, added onion powder and garlic powder along with two tablespoons of the salsa and some chopped cilantro. Voila, delicious guacamole served with my favorite chips and a sparkling gin and tonic.
2 avocados, smashed
2 tablespoons of your favorite salsa
A shake of garlic powder and onion powder
Salt and pepper to taste
Juice from 1/2 lime
Four sprigs of cilantro, leaves removed and minced.
- Combine all ingredients (reserving the cilantro for garnish).
- Place in a decorative bowl and sprinkle with cilantro.
- Serve with fresh tortilla chips.
