This is my favorite breakfast or anytime snack for that matter. There are several different types of oats to choose from including instant (aka quick cook), rolled, steel-cut (aka Irish) and Scottish. For the recipe below, I use gluten-free Old Fashioned oats. I try to avoid individual serving, pre-packaged oats (other than plain) because they are typically high in sodium and sugar.
It’s also so easy to change up the flavor by adding honey, nuts, brown sugar, maple syrup, fresh fruit, apple butter or even a teaspoon of jam or jelly.
1/2 cup Old Fashioned oats
1/3 cup water
1/4 cup blueberries
1/4 cup coconut milk
- Place oats in a microwave-safe bowl, add water.
- Microwave on high for 2 minutes.
- Top with blueberries and coconut milk.
