Kale and Egg Scramble

The title of this is Kale and “Egg” Scramble so as to differentiate between this recipe and my other favorite that replaces the egg with tofu. Scrambles are the best because they are quick, pretty much anything in the refrigerator can be combined to make a scramble and they are perfect for breakfast lunch or dinner; so be creative. This one combines kale, ham, tomatoes, green onion, egg, avocado and feta cheese.

Saute the ham in a bit of olive oil until brown on all sides, add the kale cooking until wilted. Sprinkle on some feta cheese or other shredded cheese of your choice. Only use a small amount of cheese because you want to taste the other delicious flavors. Scoop onto a plate and decorate with sliced tomato, green onion and chopped avocado.

This dish as prepared is 288 calories with 13 grams of protein.
