Still have some leftover ham? Make ham salad. My grandmother traditionally ground the ham when she made ham salad. I prefer to see the tiny little minced pieces. I served this with fresh spinach leaves from the Fiddleheads food co-op. I added fresh cut pineapple to accentuate the other flavors.
This recipe serves two. It was fast, easy and brightened an otherwise gloomy day.
If you don’t have pineapple, you could always substitute orange or even peach slices.
1 cup ham, diced
1/4 cup pineapple, diced
2 tablespoons mayonnaise
1 celery stalk, diced
- Combine the ham, celery and mayonnaise.
- Place the spinach leaves in the bottom of a bowl or plate. Add a scoop of the ham salad on top.
- Sprinkle on the pineapple.
