This is my favorite chicken salad recipe ever and I adore all types of chicken salad. This one is a flavorful balance of savory, salty and crunchy. It includes tender, freshly roasted chicken, capers, red onion, celery, parsley, lemon juice, mayonnaise and bit of dijon mustard. I’m trying to eat less bread, so I served it with baby lettuce but I would rather have slathered it onto a French baguette if truth be told.
2 cups of roasted chicken, pulled into bite size pieces
1 tablespoon capers plus some juice
1 celery stalk, minced
1 tablespoon minced parsley
Juice of 1/2 lemon
1/4 cup mayonnaise
1 teaspoons dijon mustard
- Place the chicken, capers, celery and parsley into a bowl. Combine.
- Mix the mayonnaise, mustard and lemon juice together until smooth.
- Stir the mayonnaise mixture into the bowl and give it a good stir until mixed through.
- Salt and pepper to taste.
