This chili recipe combines the best of butternut squash with cinnamon and the spicey, savory flavors of chili powder and cumin. Use half the package of ground turkey to make the Turkey Meatball recipe. Many of the ingredients are similar so this is the perfect recipe pair to prepare in a single afternoon. This recipe serves two generous portions. If you have leftover chili, make Chili Filled Green Bell Peppers.
1/2 pound ground turkey
1/2 butternut squash, peeled and diced
1/3 yellow onion, diced
2 garlic cloves, minced
1/2 green bell pepper, diced
1 15-ounce can cannellini beans
1-1/2 cups crushed tomatoes
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon cinnamon
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon minced cilantro for garnish
- Saute the garlic and onion in a dutch oven or large saucepan until tender.
- Add the turkey and green bell pepper, gentle stir until the turkey is cooked through.
- Add the crushed tomatoes, spices, beans and butternut squash.
- Cook for an hour on low.
- Salt and pepper to taste. Sprinkle on cilantro and enjoy.
